About the dish

Gangneung soft tofu set with seawater. Gangneung's Chodang village has long curdled its tofu with clean East Sea seawater as brine, giving a soft, gently briny flavor all its own. Chodang tofu is said to take its name from the pen name of Joseon scholar Heo Yeop, and is Gangneung's signature local food.

Key ingredient

Tofu (dubu) — quality protein in which soy protein is concentrated and easily absorbed; isoflavones ease menopausal symptoms and help support bone health; low-calorie and high-protein, well suited to dieting. In season year-round; mainly from Chodang in Gangneung.

Ingredients

Main: soft tofu, seawater brine, seasoned soy sauce · Seasoning: soy sauce, chili powder, minced scallion, sesame oil, sesame

Simple recipe

  1. Heat soy milk and curdle it into soft curds with brine.
  2. Gently scoop out the soft tofu.
  3. Make seasoned soy sauce (soy sauce, chili powder, scallion).
  4. Ladle the warm tofu into a bowl.
  5. Serve plain with the seasoned soy sauce alongside.
