About the dish

A nutty raw fish raised on the highlands. Trout is a freshwater fish prized for its nutty richness from its high omega-3 content, farmed on clean highlands such as Pyeongchang. Tossed with vegetables and cho-gochujang, songeo hoe is a winter delicacy of the mountains.

Simple recipe

  1. Clean and fillet the trout.
  2. Slice the flesh thin.
  3. Lay down a bed of julienned vegetables.
  4. Arrange the slices neatly on top.
  5. Serve with cho-gochujang.
