About the dish

Seolleongtang, food shared to ease hunger regardless of rank. When the last of the cold bites hardest, you crave something warm and filling — and seolleongtang is hard to leave off that list. Its name is linked to the seonnong rite, an ancient royal ceremony of plowing and prayer for a good harvest.

Key ingredient

Beef (sogogi) — rich in quality protein and essential amino acids that build muscle and stamina; high in iron and zinc to support healthy iron levels and strengthen immunity; plenty of B vitamins to relieve fatigue. In season year-round; mainly from Hoengseong and Hongcheon.

Ingredients

Main: beef leg bones, brisket, shank, scallion, somen noodles · Seasoning: salt, pepper, minced scallion

Simple recipe

  1. Soak the leg bones and brisket in cold water to draw out blood.
  2. Boil once and discard the first water, then add fresh water and simmer 4-6 hours.
  3. When the broth turns milky, lift out the brisket and slice it.
  4. Put warmed noodles or rice and meat in a bowl and pour over the hot broth.
  5. Serve with scallion, salt and pepper.
