Glass noodles with vegetables, a Seollal feast staple

About the dish

Japchae began as a simple dish of mixed vegetables; glass noodles were added later to give it today's form. Said to have delighted King Gwanghaegun, its colorful strands make it a fixture of every feast.

Key ingredient

Glass noodles (dangmyeon) — made from sweet-potato and potato starch, chewy and easy to digest with almost no fat. The backbone that makes japchae satisfying. Year-round, nationwide.

Ingredients

Main: glass noodles, spinach, carrot, onion, bell pepper, mushroom, beef · Seasoning: soy sauce, sugar, minced garlic, sesame oil, sesame

Simple recipe

  1. Soak the glass noodles, then boil until tender and toss with soy sauce and sesame oil.
  2. Julienne and stir-fry the vegetables separately.
  3. Season and stir-fry thin strips of beef.
  4. Combine everything with the noodles.
  5. Adjust with soy sauce and sugar and finish with sesame.
