About the dish

Sweet-spicy braised chicken born in Andong's old market. Andong jjimdak began in the chicken alley of Andong's old market, braising chicken, vegetables and glass noodles in soy-sauce seasoning. Sweet-spicy and generous, it became Andong's signature local food, good for the whole family to share.

Key ingredient

Chicken (dak-gogi) — lean, easily digested quality protein, ideal for recovery and restorative meals; methionine and essential amino acids support the liver and immunity; rich in vitamin A for healthy skin and mucous membranes. In season year-round (a summer tonic); raised nationwide.

Ingredients

Main: chicken, glass noodles, potato, carrot, onion, scallion, cheongyang chili, dried chili · Seasoning: soy sauce, sugar, minced garlic, oyster sauce, corn syrup

Simple recipe

  1. Cut the chicken into pieces, parboil, and prepare the vegetables and glass noodles.
  2. Make a sauce of soy sauce, sugar, corn syrup and minced garlic.
  3. Add the sauce and water to the chicken and braise.
  4. Add potato, onion and carrot and cook.
  5. Add soaked glass noodles and cheongyang chili and reduce to a glossy braise.
