About the dish

A pancake fried with the scent of spring mugwort. Ssuk-jeon is fragrant spring mugwort mixed into batter and pan-fried, full of the aroma of mugwort, prized even as a medicinal herb. It is a warm seasonal treat for enjoying the scent of spring greens.

Key ingredient

Mugwort (ssuk) — good for poor circulation, menstrual pain and irregularity, cold conditions and other women's ailments; improves rough skin and eczema; its cineol curbs E. coli and stimulates the gut to support immune health. In season April; nationwide.

Ingredients

Main: mugwort, glutinous rice flour, cooking oil · Seasoning: salt, honey

Simple recipe

  1. Trim and wash the mugwort.
  2. Mix the mugwort into a flour batter.
  3. Spread thin in a pan.
  4. Fry golden.
  5. Serve as a fragrant spring pancake.
