Seasoned bracken fern

About the dish

In North Jeolla, the aged greens eaten on the first full moon are simmered with perilla liquid.

Key ingredient

Bracken fern (gosari) — protects the skin and mucous membranes and is good for the complexion; clears the head and strengthens teeth and bones; helps support healthy iron levels and osteoporosis, good for children, expectant mothers and elders; smooths metabolism. In season April; mainly from Gangneung.

Ingredients

Dried fern 500g, water 3 tbsp · Seasoning: soup soy sauce 1 tbsp, perilla powder 1 tbsp, minced garlic 1 tbsp, sesame oil 1 tbsp

Simple recipe

  1. Put the dried fern in a pot with cold water and boil until the stems soften.
  2. Rinse the boiled fern in cold water, trim off tough stems, and squeeze leaving a little water.
  3. Toss the fern in the seasoning.
  4. Stir-fry the seasoned fern briefly, add water, and braise gently until tender.
  5. Lower the heat, cover, and cook a little more.
