Grilled croaker, spring spawning run
Two stone-hard bones hidden in its head earned the yellow croaker its old names seoksueo and seogeo, the 'stone-head fish,' while its habit of riding the spring currents inshore brought the name yusueo. Above all it was called jogi, 'the fish that helps one's energy,' prized for restoring people left weakened by the long winter — a name old texts spelled with several different characters of the same sound.
Yellow croaker (jogi) — easily digested protein well suited to the elderly and convalescents; rich in calcium and phosphorus for bone health, with vitamins that help restore stamina. Best in spring, mainly from Yeonggwang & Chujado.
Main: yellow croaker, coarse salt · Seasoning: salt, sesame oil
Byeongyeongseolseongsatto (Byeongyeongjujojang, South Jeolla) — a distilled soju at 40% ABV, chosen to pair with today's dish.
