Grilled seasoned dried pollack

About the dish

Hwangtae-gui is dried pollack soaked until tender, brushed with a gochujang seasoning and grilled. Salty-savory and chewy, it is loved all around — as a side dish for rice and a snack to go with drinks.

Key ingredient

Pollack (myeongtae) — good for colds, flagging appetite and sluggish digestion; excellent for hangover relief and liver health, with sulfur-bearing amino acids that lower blood cholesterol. January season, mainly from Sokcho.

Ingredients

Main: hwangtae (dried pollack), sesame oil · Seasoning: gochujang, soy sauce, minced garlic, starch syrup, sesame seeds

Simple recipe

  1. Moisten the dried-pollack fillets in water to soften them.
  2. Remove the bones, open the fish flat and score it lightly.
  3. Give it a first light grilling with sesame oil and soy sauce.
  4. Brush on the gochujang seasoning and grill.
  5. Cook until golden and serve sprinkled with sesame seeds.
