Domi-jjim is sea bream steamed beneath garnishes of many colors, a dish so splendid it graced feast tables and royal court spreads. Delicate, clean-tasting bream and meticulously prepared toppings make it Korean formality on a plate.
Sea bream (domi) — a premium white-fleshed fish crowned the 'king of fish'; its protein and taurine help the body recover from fatigue, and the lean flesh is delicate and easy to digest. In season in spring, mainly from the south coast.
