Buckwheat noodles, Pyeongchang-style
Makguksu is a rustic noodle of roughly ground buckwheat, a homegrown dish of Gangwon-do, where buckwheat kept meals on the table in the barren mountains. Served in dongchimi brine or broth, it is enjoyed clean and simple.
Buckwheat (memil) — good for the skin and weight control, and helps ward off high blood pressure; it supports the liver against hangovers, aids diuresis, and helps the pancreas secrete insulin. Harvested in October, mainly from Jeju.
