Grilled marinated ribs — a Labor Day family treat

About the dish

Beef ribs have been treasured since old times, turning tender and deeply flavorful when marinated and cooked. Never absent from feasts, holidays and tables set for honored guests, galbi is the standard-bearer of Korean meat cooking.

Key ingredient

Beef — quality protein and essential amino acids build muscle and stamina; plenty of iron and zinc to support healthy iron levels and support immune health, plus B vitamins that fight fatigue. In season year-round, mainly from Hoengseong & Hongcheon.

Ingredients

Beef ribs 1kg, onion 160g (1), pear 190g (1/2) <Marinade> soy sauce 1 cup, minced scallion 4 Tbsp, minced garlic 2 Tbsp, sesame oil 2 tsp

Simple recipe

  1. Cut the ribs into 5 cm pieces, soak in cold water to draw out the blood, trim the fat and score each piece 2-3 times.
  2. Boil enough water to cover the ribs, blanch them briefly, then lift them out and strain the broth clean of fat.
  3. Cut the onion into good-size pieces, grate the pear and mix the marinade ingredients.
  4. Mix the ribs thoroughly with the marinade and let them rest overnight.
  5. Put the marinated ribs and their marinade in a pot and simmer slowly over medium heat.
  6. When the ribs are cooked, add the onion and finish gently over low heat.
