About the dish

Someori gukbap is made by simmering an ox head and leg bones for hours, then serving the rich broth over rice with slices of the pressed meat. Gonjiam and nearby towns are famous for it, and it is loved for its deep, sustaining flavor.

Key ingredient

Beef (sogogi) — quality protein and essential amino acids build muscle and stamina; iron and zinc help support healthy iron levels and strengthen immunity, and B vitamins ease fatigue. Good all year round, mainly from Hoengseong & Hongcheon.

Ingredients

Main: ox head meat, beef leg bones, rice, scallion, radish · Seasoning: salt, pepper, minced scallion

Simple recipe

  1. Soak the ox head meat and bones in cold water to draw out the blood.
  2. Add water and simmer for 3-4 hours until the broth turns milky.
  3. Lift out the meat and slice it into thin pieces.
  4. Warm the rice with ladlefuls of broth, top with the meat and pour over the hot soup.
  5. Serve with scallion, salt, pepper and dadaegi (spicy paste) on the side.
