Barley-aged dried croaker with chilled green-tea rice, a summer set

About the dish

A set meal of wind-dried gulbi. Bori-gulbi jeongsik serves gulbi (dried croaker) aged buried in barley, steamed and paired with rice in green-tea water. The salty croaker and mild green-tea rice make a Namdo specialty spread.

Key ingredient

Barley (bori) — rich in dietary fiber that adds bulk in the gut to ease constipation; abundant polyphenols give strong antioxidant power that slows aging and supports immune health. In season June; mainly from North Jeolla; cultivars include Bunong and Olbori.

Ingredients

Main: bori-gulbi (barley-aged croaker), green tea, rice, chili, young garlic · Seasoning: gochujang, seasoned sauce

Simple recipe

  1. Soak the gulbi in rice water and steam it.
  2. Pick the flesh along the grain.
  3. Pour green-tea water or cold water over the rice.
  4. Set out an array of side dishes.
  5. Top with the croaker and serve as a set meal.
