Spicy dried-pollack salad

About the dish

Sweet-and-sour dressed yellow pollack. Hwangtae-muchim is softened dried-pollack strips tossed in a chili-powder dressing. Its savory, chewy texture makes it an ideal side dish.

Key ingredient

Pollack (myeongtae) — helps when you have a cold or chills, poor appetite or indigestion; outstanding for hangover relief, liver health and flushing waste; its sulfur-bearing amino acids help lower blood cholesterol. In season January; mainly from Sokcho.

Ingredients

Main: shredded dried pollack, cucumber, carrot · Seasoning: chili powder, gochujang, vinegar, sugar, minced garlic

Simple recipe

  1. Dampen the dried pollack to soften it.
  2. Squeeze out the water.
  3. Make a dressing of chili powder, soy sauce and corn syrup.
  4. Toss the pollack in the dressing.
  5. Drizzle with sesame and sesame oil and serve.
