Silky pine-nut rice porridge

About the dish

A nutty tonic porridge from a handful of pine nuts. Jatjuk is porridge cooked with finely ground pine nuts, nutty and smooth, long prized as a tonic and convalescent food. It is also a specialty of pine-nut country such as Gapyeong.

Key ingredient

Pine nuts (jat) — an FDA study found that eating 42.5g or more of pine nuts daily can lower heart-disease risk; their unsaturated fats such as oleic and linoleic acid keep skin supple. In season November; mainly from Gapyeong, Gyeonggi.

Ingredients

Main: pine nuts, soaked rice, water · Seasoning: salt

Simple recipe

  1. Grind the pine nuts fine into pine-nut milk.
  2. Grind the soaked rice fine and boil.
  3. Add the pine-nut milk to adjust the texture.
  4. Cook while stirring so it does not scorch.
  5. Season with salt and serve as a tonic.
