About the dish

Yeolmu guksu is a summer dish of thin somyeon noodles bathed in the tangy brine of well-ripened yeolmu kimchi. Crisp radish greens and an ice-cold kimchi broth make it a delicacy that cools the hottest days.

Key ingredient

Young summer radish (yeolmu) — restores energy and helps with both low and high blood pressure; it keeps the blood from turning acidic, whets the appetite, builds resistance to colds and infections, and is good for the eyes. In season in June, grown nationwide.

Ingredients

Main: somyeon (thin wheat noodles), yeolmu kimchi, kimchi brine, cucumber, boiled egg · Seasoning: red-pepper powder, sugar, vinegar, minced garlic

Simple recipe

  1. Prepare the yeolmu kimchi and its brine.
  2. Boil the somyeon and rinse in cold water.
  3. Place the noodles in a bowl and pour over the kimchi brine.
  4. Top with yeolmu kimchi and cucumber.
  5. Serve with a gochujang seasoning and a little slushy ice.
