About the dish

Gogi-guksu is Jeju's homegrown dish of noodles in a rich pork broth, topped with slices of boiled pork. No island feast, wedding or family occasion went without it — a warm, familiar bowl for the people of Jeju.

Key ingredient

Pork — about ten times the vitamin B1 of beef, excellent for fatigue and energy metabolism; ample quality protein plus methionine to protect and wellness the liver, and unsaturated fats that help lower blood cholesterol. In season year-round, mainly from Jeju and the Jirisan area.

Ingredients

Main: medium wheat noodles, pork broth, pyeonyuk (boiled pork slices), bean sprouts, scallion, gim · Seasoning: minced garlic, soup soy sauce, salt

Simple recipe

  1. Boil the pork until tender, slice it thin and save the broth.
  2. Cook the noodles and rinse them.
  3. Fill a bowl with noodles and pour over the hot broth.
  4. Top with the pork slices and chopped scallion.
  5. Serve light and simple, Jeju style.
