About the dish

Kkanpung saeu is a Chinese-style dish of crisply fried shrimp tossed in a sweet-and-spicy kkanpung sauce. Springy shrimp and a bold, clinging glaze make every bite a treat.

Key ingredient

Shrimp (saeu) — a stamina food said to build vigor and strengthen the kidneys; its glycine calms the waking brain, so shrimp in the evening can even help you sleep soundly, and it supports growth. In season in September, mainly from the West Sea.

Ingredients

Main: shrimp, starch, scallion, garlic, dried chilies, bell pepper · Seasoning: soy sauce, vinegar, sugar, chili oil

Simple recipe

  1. Clean the shrimp, coat in batter and deep-fry until crisp.
  2. Reduce a spicy-sweet sauce of soy sauce, vinegar and sugar.
  3. Stir-fry the garlic and chilies.
  4. Add the fried shrimp and toss over the heat.
  5. Turn everything in the sauce until coated and serve.
