Daeha, the large prawn, reaches its peak in autumn, when its flesh grows plump and sweet. Grilled whole over a bed of coarse salt, daeha gui is the season's simplest and best way to savor the prawn's natural sweetness.

Shrimp — long known as a stamina food that strengthens vitality and the kidneys; its glycine calms the brain's alert state, so shrimp in the evening can help you sleep soundly. Best in September, mainly from the West Sea.

Simple recipe

  1. Clean the prawns and trim the whiskers.
  2. Arrange them in a pan or on a bed of salt.
  3. Cover and grill.
  4. Flip once they turn red.
  5. Serve with chojang dipping sauce.
