About the dish

Jeju's black pig is a native breed raised in the volcanic island's environment, its meat chewy and deeply flavored. Grilled and dipped in meljeot, a salted-anchovy sauce, heukdwaeji gui stands among Jeju's defining delicacies.

Key ingredient

Pork (dwaejigogi) — about ten times the vitamin B1 of beef, excellent for fatigue recovery and energy metabolism; quality protein and methionine help protect and support the liver, and unsaturated fatty acids lower blood cholesterol. Enjoyed year-round, mainly from Jeju & the Jirisan area.

Main: Jeju black pork, meljeot (salted-anchovy sauce), scallion, garlic · Seasoning: salt, pepper

Simple recipe

  1. Cut the Jeju black pork into thick slices.
  2. Sprinkle lightly with coarse salt.
  3. Grill on a hot plate until crisp outside and moist within.
  4. Cook to a golden brown, letting the fat render off.
  5. Serve with meljeot and wrapping greens.
