About the dish

Samseon jjamppong is a fiery noodle soup: an abundance of seafood and vegetables stir-fried in chili oil, then simmered into a bracing red broth. Refreshing and spicy at once, it stands beside jjajangmyeon as one of the twin peaks of Korean-Chinese cooking.

Key ingredient

Wheat flour (milgaru) — an energy-rich source of carbohydrates and plant protein (gluten), with B vitamins and dietary fiber; the base of noodles, dumplings, jeon and countless flour-made favorites. Early-summer harvest, produced nationwide.

Ingredients

Main: Chinese-style noodles, squid, shrimp, mussels, pork, cabbage, onion, bok choy, scallion · Seasoning: red-pepper powder, chili oil, minced garlic, soy sauce, broth

Simple recipe

  1. Clean and prep the seafood and vegetables.
  2. Fry red-pepper powder and minced garlic in oil to draw out a chili oil.
  3. Stir-fry the vegetables and seafood, then pour in the broth.
  4. Boil until fiery and season to taste.
  5. Pour over boiled noodles and serve.
