About the dish

Gamasotbap is rice cooked in a heavy cauldron, prized for both its fluffy grains and the toasty nurungji crust scraped from the bottom. The deep flavor comes from careful heat control. Fitting for Rice Day, whose date (8-18) spells the character for rice.

Rice (ssal) — Korea's staple and main energy source; quick to digest with B vitamins for a balanced meal. Autumn harvest, mainly from Icheon & Yeoju.

Ingredients

Main: rice, water · Seasoning: sauce of soy sauce, chili flakes, sesame oil, plus nurungji

Simple recipe

  1. Place soaked rice in the cauldron.
  2. Boil over high heat, then steam on low.
  3. Scoop out the fluffy rice.
  4. Scrape up the nurungji crust.
  5. Serve with seasoning sauce and side dishes.
