About the dish

In Gyeongsangbuk-do, hobak jeon is made with egg, and glutinous rice flour sometimes takes the place of wheat flour. Cooks there may fold in thin scallions or pine nuts as well.

Key ingredient

Summer squash (aehobak) — easy to digest and helpful for indigestion; it supports circulation and insulin production, its yellow beta-carotene makes it nourishing, and it works to help maintain healthy cholesterol levels and blood pressure. In season in July, grown nationwide.

Ingredients

Ripe pumpkin 200g, eggs 100g (2), crown daisy 30g, red chili 15g (1), flour 55g (1/2 cup), water 100mL (1/2 cup), salt 1 tsp, cooking oil 1 Tbsp

Simple recipe

  1. Seed and peel the pumpkin, chop it finely and grind in a blender with the water.
  2. Add the eggs and flour, season with salt and mix evenly.
  3. Slice the red chili into thin rounds (0.3 cm) and pick the crown daisy leaves.
  4. Heat oil in a pan, ladle in the batter one scoop at a time, top with red chili and crown daisy and fry.
