About the dish

Dak hanmari means 'one whole chicken,' simmered clear in its pot; diners dip the meat in a piquant sauce and finish the broth with kalguksu noodles. It won its fame around Seoul's Dongdaemun district and remains a warm, convivial meal for a table of friends.

Key ingredient

Chicken (dak) — lean, easily digested quality protein, well suited to recovery and restorative meals; methionine and essential amino acids support liver function and immunity, and plentiful vitamin A benefits skin and mucous membranes. Enjoyed year-round (a summer restorative), raised nationwide.

Ingredients

Main: whole chicken, potato, tteok (rice cakes), scallion, garlic chives, kalguksu noodles · Seasoning: soy sauce, red-pepper powder, minced garlic, mustard, vinegar

Simple recipe

  1. Simmer the whole chicken with aromatics.
  2. Add the rice cakes and potatoes and cook through.
  3. Make a dipping sauce of soy sauce, vinegar and mustard.
  4. Lift out the chicken, cut it up with scissors and eat it dipped in the sauce.
  5. Finish by cooking kalguksu noodles in the remaining broth.
