About the dish

Hwanggi jokbal is pork trotters simmered with medicinal ingredients such as hwanggi (milk-vetch root) and jujubes, which subdue any gaminess and lend a fortifying character. Layering herbal virtues onto collagen-rich trotters, it is a restorative dish in the truest sense.

Key ingredient

Pork (dwaejigogi) — about ten times the vitamin B1 of beef, excellent for fatigue recovery and energy metabolism; quality protein and methionine help protect and support the liver, and unsaturated fatty acids lower blood cholesterol. Enjoyed year-round, mainly from Jeju & the Jirisan area.

Ingredients

Main: pork trotters, hwanggi (milk-vetch root), jujubes, licorice root, ginger, scallion · Seasoning: soy sauce, sugar, starch syrup, whole black pepper

Simple recipe

  1. Parboil the trotters to draw out any gaminess.
  2. Simmer until tender in a broth of hwanggi, jujubes and soy sauce.
  3. Let them steep in the broth to soak up the seasoning.
  4. Slice into thin pieces.
  5. Serve as a restorative dish with wrapping greens and saeujeot (salted shrimp).
