About the dish

Golbaengi muchim tosses sea snails and crisp vegetables in a tangy, spicy dressing, served with a nest of thin somyeon noodles alongside. With its chewy snails and a cold beer in perfect company, it is Korea's signature drinking snack.

Key ingredient

Sea snails (golbaengi) — high in protein and low in fat; taurine relieves fatigue and supports the liver, and amino acids restore vigor. Available year-round, mainly from the East Sea & Ulleungdo.

Ingredients

Main: golbaengi (sea snails), somyeon noodles, cucumber, onion, carrot, scallion · Seasoning: gochujang, gochugaru, vinegar, sugar, minced garlic

Simple recipe

  1. Drain the sea snails and cut them into bite-size pieces.
  2. Julienne the cucumber, onion and scallion.
  3. Make a dressing of gochujang, vinegar and sugar.
  4. Toss the snails and vegetables in it.
  5. Serve with the somyeon noodles alongside.
