About the dish

Buldak, 'fire chicken,' pushes heat to the limit with Cheongyang chilies and gochugaru, rising to fame in a food culture that relishes the burn. Half the fun is the cheese melted over the top, soothing each fiery bite.

Key ingredient

Chicken — lean, easily digested protein ideal for recovery meals and restorative dishes; methionine and essential amino acids support the liver and immunity, and vitamin A keeps skin and mucous membranes healthy. Good year-round (a summer restorative), raised nationwide.

Ingredients

Main: boneless chicken thigh, tteok (rice cakes), cheese, scallion · Seasoning: gochujang, gochugaru, Cheongyang chili, minced garlic, starch syrup

Simple recipe

  1. Cut the chicken thighs into bite-size pieces.
  2. Marinate in a fiery mix of gochugaru, gochujang and Cheongyang chili.
  3. Stir-fry the chicken in a hot pan.
  4. Cook through, basting with the sauce.
  5. Finish with cheese melted on top.
