About the dish

Gul bossam wraps boiled pork and kimchi together with plump oysters at their kimjang-season peak, lifting the classic bossam to another level. The briny scent of the sea against the savory richness of the meat makes it a true winter delicacy.

Key ingredient

Oyster (gul) — low in calories and fat yet rich in calcium, a favorite diet food; iron and copper help support healthy iron levels, and taurine is traditionally believed to help maintain healthy cholesterol and blood pressure. Best in February, mainly from Goseong.

Ingredients

Main: whole pork belly, oysters, bossam kimchi, musaengchae (shredded-radish salad), ginger, scallion · Seasoning: doenjang, saeujeot (salted shrimp)

Simple recipe

  1. Boil the pork belly with aromatics and cut into slices.
  2. Rinse the oysters gently in salted water and drain.
  3. Toss the shredded radish with gochugaru and fish sauce until tangy.
  4. Arrange the pork, oysters and radish salad on a platter.
  5. Serve as wraps with bossam kimchi.
