About the dish

Memilmuk muchim tosses strips of buckwheat jelly with kimchi. The mild, clean-tasting muk set against the kimchi's tang makes it one of Gangwon-do's homiest side dishes.

Key ingredient

Buckwheat (memil) — kind to skin and waistline, and credited with warding off high blood pressure; it supports the liver against hangovers, acts as a diuretic and helps the pancreas keep insulin flowing. In season in October, mainly from Jeju.

Ingredients

Main: memilmuk (buckwheat jelly), kimchi, crushed gim, scallion · Seasoning: soy sauce, gochugaru, sesame oil, sesame seeds

Simple recipe

  1. Slice the buckwheat jelly into thick strips.
  2. Chop the kimchi into small pieces.
  3. Ready the crushed gim and the sauce.
  4. Toss the jelly with the kimchi.
  5. Finish with crushed gim and sesame seeds and serve.
