Memilmuk muchim tosses strips of buckwheat jelly with kimchi. The mild, clean-tasting muk set against the kimchi's tang makes it one of Gangwon-do's homiest side dishes.
Buckwheat (memil) — kind to skin and waistline, and credited with warding off high blood pressure; it supports the liver against hangovers, acts as a diuretic and helps the pancreas keep insulin flowing. In season in October, mainly from Jeju.
