About the dish

Onban means 'warm rice' — a Pyeongyang specialty of rice bathed in chicken broth and topped with mung bean pancakes and garnishes. Clean and mild, this northern-style soup rice graced feast tables and was set before honored guests.

Key ingredient

Chicken (dakgogi) — lean, easily digested quality protein, ideal for recovery and restorative meals; methionine and essential amino acids support liver function and immunity, and vitamin A keeps skin and mucous membranes healthy. Good all year round (a summer restorative), raised nationwide.

Main: chicken, rice, mung bean pancakes, egg ribbons, minari (water dropwort), scallion · Seasoning: soup soy sauce, minced garlic, salt, pepper

Simple recipe

  1. Boil the chicken, shred the meat and strain a clear broth.
  2. Prepare the mung bean pancakes, mushrooms and egg ribbons.
  3. Top the rice with the chicken and garnishes.
  4. Pour over the hot chicken broth.
  5. Serve mild and clean, with seasoned soy sauce alongside.
