About the dish

Cheonbuk in Boryeong, South Chungcheong, made its name with gul gui — a whole village has grown up around oysters roasted in the shell and pried open at the table. It is a winter attraction fed by the abundant oysters of the West Sea mudflats.

Key ingredient

Oyster (gul) — low in calories and fat yet rich in calcium, popular as a diet food; iron and copper help support healthy iron levels, while taurine is traditionally believed to help maintain healthy cholesterol and blood pressure. In season in February, mainly from Goseong.

Ingredients

Oysters (in the shell), salt as needed, water as needed

Simple recipe

  1. Scrub the shells roughly with a brush, then swish the oysters clean in weak salt water (rinsing several times in plain water washes away their sweetness).
  2. Put the oysters in a pot with just a little water and cook until the shells open.
