Kkotdeungchigi guksu is a Jeongseon mountain dish of thick buckwheat noodles — so springy that slurping them 'hits you on the nose,' which is how it got its name. A hardy specialty born of Gangwon's rugged highlands.
Buckwheat (memil) — good for skin and weight, traditionally valued for supporting healthy circulation and easing hangovers, and supports liver and pancreas function. Peak in October, mainly from Jeju.
