Buckwheat crepe rolled with kimchi filling

About the dish

The savory pancake that comes to mind on a rainy day. Summer brings sweltering heat, but it is also the rainy season; through the long midsummer rains, farm work paused and people mended tools or patched up the house, catching up on chores — and made warm buckwheat pancakes.

Key ingredient

Buckwheat (memil) — good for the skin and dieting, and traditionally valued for supporting heart and metabolic health; aids liver function and hangover relief and acts as a diuretic; supports the pancreas to smooth insulin secretion. In season October; mainly from Jeju.

Ingredients

Main: buckwheat flour, kimchi, tofu, pork or seasoned radish, scallion · Seasoning: minced garlic, chili powder, soy sauce, perilla oil

Simple recipe

  1. Fry the buckwheat batter thin into crepes.
  2. Stir-fry seasoned radish and kimchi for the filling.
  3. Place the filling on a crepe and roll it up.
  4. Lightly pan-sear.
  5. Cut into pieces and serve Gangwon-style.
