About the dish

A jelly set from what the mountains give. Dotorimuk is a jelly cooked and set from acorn starch, a vital famine food in lean years. Its astringent compounds help expel waste, so it is loved today as a health food too.

Ingredients

Main: acorn jelly, lettuce, cucumber, carrot, gim flakes · Seasoning: soy sauce, chili powder, minced scallion, vinegar, sesame oil

Simple recipe

  1. Dissolve acorn starch in water and bring to a boil.
  2. Cook while stirring so it does not scorch.
  3. Pour into a mold and let set.
  4. Cut into bite-size pieces.
  5. Drizzle with seasoned soy sauce and serve.
