Dried pollack soup, gentle hangover cure

About the dish

A warm breakfast set from a single pollack. Bugeo — pollack dried hard — keeps well and spread even to the mountains. Simmered milky with soybean sprouts and radish, bugeo-guk is a familiar soup, good for a hangover and a fixture on the morning table after ancestral rites.

Key ingredient

Pollack (myeongtae) — helps when you have a cold or chills, poor appetite or indigestion; outstanding for relieving hangovers, supporting the liver and flushing waste; its sulfur-bearing amino acids help lower blood cholesterol. In season January; mainly from Sokcho.

Ingredients

Main: shredded dried pollack, radish, soybean sprouts, tofu, egg, scallion · Seasoning: sesame oil, minced garlic, salted shrimp, soup soy sauce, salt

Simple recipe

  1. Soak the dried pollack, squeeze dry, and stir-fry in sesame oil.
  2. Add water and radish and boil until the broth turns milky.
  3. Add diced tofu and stream in beaten egg.
  4. Season with minced garlic, scallion and salted shrimp.
  5. Boil once and serve warm.
