Hobakjuk

호박죽
Ho-bak-juk

Sweet pumpkin porridge

About the dish

A sweet porridge made from ripe pumpkin. Hobakjuk is a sweet porridge of well-ripened pumpkin mashed and cooked, good for reducing swelling and so kept as a postpartum food. Soft and sweet, it has long been loved as a tonic for the young, the old and the frail.

Key ingredient

Mature pumpkin (neulgeun hobak) — its diuretic and supporting action helps reduce swelling, so new mothers often drink the simmered liquid; soft and easy to digest, it restores energy in the elderly and the unwell. In season November; grown nationwide.

Ingredients

Main: mature pumpkin, glutinous rice flour, red beans, glutinous rice balls · Seasoning: salt, sugar

Simple recipe

  1. Steam the pumpkin until soft and mash smooth.
  2. Add water and bring to a boil.
  3. Stir in glutinous rice flour to adjust the texture.
  4. Add boiled red beans and rice balls.
  5. Season with salt and sugar and serve.
