About the dish

A pot of sharp jeotguk from the Chungcheong West Sea. Ureok-jeotguk is dried rockfish seasoned with salted shrimp, a folk dish of the Chungcheong west coast. Clear yet deeply savory, it was often served to soothe the stomach after a feast or big event.

Key ingredient

Rockfish (ureok) — high in methionine and cystine, which support brain-nerve cell formation; unsaturated fats help maintain healthy cholesterol levels to help support overall wellness; sulfur amino acids promote insulin secretion. In season February; mainly from Seosan.

Ingredients

Main: dried rockfish, radish, tofu, water dropwort, scallion, salted shrimp · Seasoning: minced garlic, cheongyang chili, salt

Simple recipe

  1. Cut the dried (or fresh) rockfish into pieces and rinse.
  2. Boil the rockfish and radish in rice water.
  3. Add diced tofu and season with salted shrimp.
  4. Add minced garlic, scallion and red chili.
  5. Boil clear and serve refreshingly.
