About the dish

The warm meeting of boiled pork and kimchi in kimjang season. Bossam is boiled pork wrapped in kimchi, born of enjoying freshly mixed filling with boiled pork on kimjang day. It carries the warm custom of family and neighbors sitting together to share the labor.

Key ingredient

Pork (dwaeji-gogi) — about ten times the vitamin B1 of beef, good for relieving fatigue and energy metabolism; rich in quality protein, with methionine that protects and supports liver health; unsaturated fats help lower blood cholesterol. In season year-round; mainly from Jeju and the Jirisan area.

Ingredients

Main: pork belly, ginger, scallion, garlic, bossam kimchi, oysters · Seasoning: doenjang, salted shrimp, ssamjang

Simple recipe

  1. Boil the pork belly with doenjang, scallion, ginger and garlic.
  2. Simmer 40-50 minutes until a chopstick slides through.
  3. Lift out the meat, let it cool a moment, and slice.
  4. Serve with oysters, seasoned radish and salted shrimp.
  5. Serve to be wrapped in bossam kimchi and lettuce.
