Soy-braised pig's trotters
A chewy delicacy braised in soy sauce. Jokbal is pig trotters braised in soy sauce and aromatics, rich in collagen and chewy. Made famous around Jangchung-dong, it became an ordinary delicacy loved as a late-night snack and drinking companion.
Pork (dwaeji-gogi) — about ten times the vitamin B1 of beef, good for relieving fatigue and energy metabolism; rich in quality protein, with methionine that protects and supports liver health; unsaturated fats help lower blood cholesterol. In season year-round; mainly from Jeju and the Jirisan area.
