About the dish

A tangy spring side with a pleasant bitterness. Bellflower root, with its bitter taste and saponins good for the airways, was used as a medicinal herb. Tossed sweet and sour, doraji-saengchae is a tidy namul side dish that whets the appetite.

Key ingredient

Bellflower root (doraji) — increases respiratory mucus to clear phlegm and helps support wellness around colds; effective for chronic bronchitis, pharyngitis and tonsillitis; excellent for asthma, good for children and elders with weak immunity. In season July; mainly from Yeoju.

Ingredients

Main: bellflower root, cucumber, water dropwort · Seasoning: chili powder, vinegar, sugar, minced garlic, salt

Simple recipe

  1. Tear the bellflower root thin and rub with salt to draw out bitterness.
  2. Rinse and squeeze dry.
  3. Season with chili powder, vinegar, sugar and minced garlic.
  4. Toss sweet and sour.
  5. Sprinkle with sesame and serve.
