About the dish

The mild sundae of Byeongcheon, Chungcheong. Byeongcheon (Aunae) sundae is pig small intestine stuffed with vegetables and blood, made mild — a Chungcheong local sundae. It grew famous thanks to easy access to fresh offal from nearby slaughterhouses.

Key ingredient

Pork (dwaeji-gogi) — about ten times the vitamin B1 of beef, good for relieving fatigue and energy metabolism; rich in quality protein, with methionine that protects and supports liver health; unsaturated fats help lower blood cholesterol. In season year-round; mainly from Jeju and the Jirisan area.

Main: pig small intestine, blood, glass noodles, garlic chives, cabbage, glutinous rice · Seasoning: minced garlic, ginger, salt, pepper

Simple recipe

  1. Clean the pig intestine well.
  2. Season glass noodles, blood, vegetables and glutinous rice for the filling.
  3. Stuff the intestine and tie.
  4. Steam over high heat without bursting.
  5. Cool slightly, slice, and serve with salt and perilla powder.
