About the dish

Doraji namul is bellflower root stir-fried and lightly seasoned, its clean, faintly bitter edge waking up the appetite. It is one of the classic three-color namul that never miss their place on ancestral-rite and holiday tables.

Key ingredient

Bellflower root (doraji) — helps the airways by loosening phlegm and warding off colds; long used for bronchitis, sore throats and asthma, and gentle enough for children and the elderly. In season in July, mainly from Yeoju.

Ingredients

Main: bellflower root (doraji), sesame oil · Seasoning: soup soy sauce, minced garlic, sesame seeds, salt

Simple recipe

  1. Tear the bellflower root into thin strips and knead with salt to draw out the bitterness.
  2. Rinse and squeeze out the water.
  3. Stir-fry in oil.
  4. Season with minced garlic and soup soy sauce.
  5. Finish with sesame seeds and scallion.
