About the dish

Eomnamu-sun, also known as gaedureup, are the young shoots of the castor aralia tree — more fragrant and pleasantly bitter than ordinary dureup. Blanched and dressed, or dipped in vinegared gochujang, they are a prized springtime mountain delicacy.

Wild greens (namul) — seasonal mountain and field greens rich in fiber, vitamins and minerals; low in calories, kind to the gut, with antioxidants that strengthen immunity. In season year-round, from mountain areas nationwide.

Simple recipe

  1. Trim the eomnamu-sun (gaedureup) shoots.
  2. Blanch in boiling water.
  3. Rinse in cold water.
  4. Dress with vinegared gochujang or doenjang.
  5. Serve as a fragrant spring-greens dish.
