Blanched castor-aralia shoots
Eomnamu-sun, also known as gaedureup, are the young shoots of the castor aralia tree — more fragrant and pleasantly bitter than ordinary dureup. Blanched and dressed, or dipped in vinegared gochujang, they are a prized springtime mountain delicacy.
