About the dish

Jang-eo gui is eel brushed with sauce and grilled, a restorative dish so rich in protein and fat that it ranks among Korea's favorite summer stamina foods. A dusting of sancho pepper cuts the richness and completes the pleasure.

Key ingredient

Eel (jangeo) — a high-protein stamina food, famed especially for men's vigor; rich in fat, yet its unsaturated fatty acids keep cholesterol from building up in the vessels, with mucin proteins and collagen besides. In season in August, mainly from the south coast.

Ingredients

Main: freshwater eel, scallion, ginger · Seasoning: soy sauce, cooking wine, sugar, rice syrup, sancho pepper

Simple recipe

  1. Clean the eel, spread it flat and score the flesh.
  2. Give it a first plain grilling.
  3. Brush on the soy-ginger glaze.
  4. Grill, basting again and again with the sauce.
  5. Serve with ground sancho pepper as a restorative meal.
