Grilled shiitake mushroom

About the dish

Deeply aromatic and satisfyingly chewy, shiitake mushrooms are made for the grill. Pyogo-gui — caps brushed with a soy seasoning and grilled — is fragrant yet light, a dish that appeared on temple tables and feast spreads alike.

Key ingredient

Shiitake mushrooms (pyogo) — vitamin D helps the body absorb calcium for strong bones and osteoporosis wellness support, and they are packed with functional compounds credited with wellness-supporting, age-gracefully support and virus-blocking effects that help ward off colds and flu. In season in September, mainly from Jangheung.

Ingredients

Main: shiitake mushrooms, sesame oil · Seasoning: soy sauce, minced garlic, sesame seeds

Simple recipe

  1. Remove the shiitake stems and score the caps.
  2. Marinate in the soy sauce and sesame oil seasoning.
  3. Grill on a gridiron or in a pan.
  4. Cook, brushing on more seasoning as you go.
  5. Sprinkle with sesame seeds and serve fragrant.
