About the dish

Byeongeo (silver pomfret) has tender flesh and few bones, which makes it perfect for braising. Simmered down with potatoes and radish, byeongeo jorim is a homey summer side dish of the Namdo region.

Key ingredient

White fish — a mild, easily digested protein source low in fat; essential amino acids aid recovery and growth, all in a low-calorie, high-protein package. In season at various times of year, from nearby coastal waters.

Ingredients

Main: byeongeo (silver pomfret), radish, potato, green chili, scallion · Seasoning: gochugaru, soy sauce, minced garlic, ginger

Simple recipe

  1. Clean the pomfret and score the flesh.
  2. Line the pot with the potatoes and radish.
  3. Spoon the seasoning sauce over the top.
  4. Pour in water and braise.
  5. Simmer until the sauce has nearly cooked down, then serve.
