About the dish

To beat the summer heat, Korean ancestors treated heat with heat — the principle of iyeolchiyeol — and samgyetang became its famous restorative. In summer, blood rushes to the skin while the body's core turns cold and the stomach weakens, so a boiling bowl of ginseng chicken puts back what the season takes.

Key ingredient

Ginseng (insam) — is traditionally valued for balanced blood sugar; improves memory, speeds recovery from fatigue and boosts working stamina, supports immune health and circulation, and its antioxidants support the body's natural defenses. September season, mainly from Geumsan.

Ingredients

Main: young chicken, abalone, glutinous rice, ginseng, jujubes, garlic · Seasoning: salt, pepper

Simple recipe

  1. Stuff the chicken with soaked glutinous rice, ginseng, jujubes and garlic.
  2. Add water and boil until fully cooked.
  3. Add the cleaned abalone and simmer together.
  4. Cook until the meat is tender and the broth grows rich.
  5. Serve as a restorative with salt, pepper and scallion alongside.
