About the dish

Yeonipbap is glutinous rice and nuts wrapped in a lotus leaf and steamed until the leaf's subtle perfume seeps into every grain. Born of temple cuisine, it is a delicacy as neat and serene as its origins.

Key ingredient

Glutinous rice (chapssal) — warm in nature, it shields the stomach and aids digestion; its sticky amylopectin lends lasting fullness, warming the body and restoring energy. Autumn harvest, grown nationwide.

Ingredients

Main: lotus leaves, glutinous rice, chestnuts, jujubes, ginkgo nuts, pine nuts, black beans · Seasoning: salt, sesame oil

Simple recipe

  1. Season the soaked glutinous rice and mix in the chestnuts, jujubes and ginkgo nuts.
  2. Wrap the rice in lotus leaves and shape into parcels.
  3. Steam in a steamer once the steam rises.
  4. Let the parcels rest to finish cooking.
  5. Serve still wrapped, fragrant with lotus leaf.
