Abalone rice porridge, the tonic porridge

About the dish

A precious porridge cooked from the sea's tonic. Jeonbok-juk is porridge made with abalone meat and viscera; as abalone was rare, it was carefully simmered as a tonic and recovery food. The deep aroma of the viscera makes it like a tonic of the sea.

Key ingredient

Abalone (jeonbok) — strengthens the liver's wellness function and is traditionally believed to help maintain healthy cholesterol levels; improves heart function and helps restore eyesight; restores vigor and relieves fatigue; its taurine dissolves gallstones and supports the kidneys. In season October; mainly from Wando.

Ingredients

Main: abalone, soaked rice, sesame oil, carrot, viscera · Seasoning: soup soy sauce, salt

Simple recipe

  1. Clean the abalone and slice the viscera and meat.
  2. Stir-fry the soaked rice in sesame oil.
  3. Add the abalone viscera and stir-fry together.
  4. Add water and simmer until the rice swells.
  5. Add the abalone meat, season with salt and serve.
